Ingredients

1/4 cup orzo

water

1 tbsp. lemon juice

small handful of mint, finely chopped

5-10 spinach leaves, finely shredded

1 tbsp. pine nuts

2 tbsp. feta

Preparation

Cook orzo according to directions, making sure to soak and rinse grains thoroughly before cooking.

Mix orzo, lemon juice, mint, spinach leaves, pine nuts, and feta together.

Serve cool.
