Ingredients
juice and rind of 3 large (or 4 small) lemons
7 egg yolks
1/2 cup sugar
Combine ingredients in the top of a double boiler and cook on low heat until thickened.
1/4 cup water
2 tsp unflavored gelatin (1 pkt)
Dissolve gelatin in water and add to yolk mixture. Cook until slightly thickened.
7 egg whites
1/2 cup sugar
Beat together until soft peaks form, gradually adding sugar. Fold into yolk mixture. Pour into a glass bowl and refrigerate.

Decorate with lemon slices and/or strawberries
Preparation
Do not let the egg whites get too stiff, or they will not blend with the custard.
