Ingredients

1 Lemon

3 Cups Heavy Whipping Cream

1 Box of Vanilla Wafers (Nilla Wafers brand or similar)

1 Pint of Rasberries

1 8 oz Tub of Marscapone Cheese

5 Tablespoons Sugar

Preparation

Whip 3 cups chilled heavy cream with 2 Teaspoons of lemon juice, 3 Tablespoons of lemon peel, and 5 Tablespoons of Sugar. Once soft peaks form, add in Marscapone until blended. On the bottom of a 9" Springform pan spread a layer of the mixture followed by a layer of cookies. Spread another layer of mixture and another layer of cookies. Frost the top with the remaining mixture and chill for 4 hours, at which point wafers will have softened into cake texture. You can place the rasberries on top of cake when ready to serve (in any manner you see fit).
