Lemon Loaf Recipe

Ingredients

1/2 cup butter

1 cup sugar

Whip butter, gradually adding sugar.

2 eggs, beaten

Add to above, one at a time.

grated rind of 1 lemon

Add to above.

1 1/2 cups flour

1 tsp baking powder

1/8 pinch salt

2/3 cup milk

Sift dry ingredients, and add to above, alternating with milk. Pour into a greased loaf pan, bake at 350 F for 1 hour.

Glaze:

1/8 cup honey

1/4 cup sugar

3 tsp lemon juice

Mix together and heat till blended. Pierce loaf while warm and pour over top.

lemon slices, very thin

When loaf cools, decorate with lemon slices.
