Ingredients
CRUST
1 1/2 cups flour,
1 1/2 stick of melted butter 1/3 cup confectioner’s sugar and a pinch of salt.
FILLING
3 eggs,
1 cup sugar,
1/2 cup corn syrup,
4 tablespoons all-purpose flour,
1 tablespoon grated lemon peel, 1/2 cup lemon juice,
and 1 cup fresh rasberries or bluberries, based on preference.
Preparation
Preheat oven to 350 degrees fairenheit. Grease 1/2- 1 inch deep baking sheet very well. Make crust with 1 1/2 cups flour, 1 1/2 stick of melted butter, 1/3 cup confectioner’s sugar and a pinch of salt. Mix ingredients on medium speed for several minutes. When dough is formed, roll it out with a roller and lay it on baking sheet. Sprinkle it with powdered sugar. Bake for 20 min. and set aside to cool. Make filling with 3 eggs, 1 cup sugar, 1/2 cup corn syrup, 4 tablespoons all-purpose flour, 1 tablespoon grated lemon peel, 1/2 cup lemon juice, and 1 cup fresh rasberries or bluberries, based on preference. Mix all of the ingredients in a bowl on high speed until it has a gluey consistency. Add flour as needed. Pour mixture into baked crust, bake for 20 minutes or until firm. Sprinkle with powdered sugar and seer in broiler for a few minutes. Let cool.
