Ingredients

For Cutlets

6 Lamb Cutlets

1 Lemon

2 Cloves Garlic

1/3 cup Olive Oil

2 tblsp Mint

For Greens

1.5 cups Broad Beans (frozen/fresh)

1.5 cups Peas (frozen/fresh)

1/2 cup Mint

squeeze of lemon

salt & pepper

Topping

sprinkled Fetta

Preparation

Grind together garlic, lemon, mint, massage into cutlets, sit for 1hr, then bake (include juices) in oven at 200 C for 30mins.

Boil peas and broad beans separately for 5 minutes each. Set aside, and pop the shells of the beans, discard shells. Roughly mash beans and peas together with mint and squeeze of lemon.Aim to get a textured mash. Add salt & pepper to taste.

Divide mash between 2 plates and place cutlets in top. Drizzle a little of the oven bake juice on top, and sprinkle generously with fetta, and afew fresh mint leaves.
