Ingredients
3 eggs
1/2 c. sugar
1 c. whipping cream
1/2 lb. vanilla wafers
juice of 2 lemons
Preparation
Finely crush cookies. Butter 7 1/2"x 7 1/2" x 2" pan and press a layer of crushed cookies to form bottom crust. Reserve some for top.
Separate eggs. Beat yolks until thick and bright yellow. Mix in sugar and lemon juice.
Beat whites until stiff and fold into mixture. Beat cream until soft peaks form and fold in last. Pour filling into prepared pan, top with another layer of cookie crumbs, and freeze.
Serve frozen.
