Ingredients
2 cups cake flour
3/4 cup sugar
2 tsp baking powder
1 tsp salt
3/4 buttermilk
3 tablespoon lemon juice
2 eggs lightly beaten
2 tablespoons butter melted
1 lemon zested
Glaze
1 cup powdered sugar
1/4 milk
3 tablespoon lemon juice
Frosting
2 Tablespoons softened butter
2 cups powdered sugar
1 tsp coconut extract
1/2 shredded coconut
3 tablespoons milk
lemon zest
Preparation
Pre heat oven to 425. In a large bowl, combine flour, sugar, baking powder, and salt. Add in buttermilk, eggs, lemon juice and zest, beating until well combined. Fill each donut cavity about 2/3 full. Bake for 7-9 minutes until donuts spring back when touched. Let cool in pan for 5 minutes. In a separate bowl, prepare glaze, whisking until smooth. Dip each warm donut in glaze, covering both sides of the donut. Let set on a baking rack for a minute or two. In another bowl, prepare frosting. Spread on each donut once glaze has set.
