Ingredients
1/4 cup unsalted butter
3/4 cup of sugar
1 large egg
1 1/3 cup AP flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground ginger
1 tablespoon grated lemon zest
1/2 teaspoon lemon extract
1/4 cup diced cyrstallized ginger
1/4 cup of florida cyrstals for sprinkling
Preparation
Preheat oven to 350 Line two baking sheets with parchment.
In bowl cream butter. Add sugar and beat on medium high until light and fluffy. About 5 minutes. Scrape down bowl. Add egg and lemon zest and extract.
In medium bowl whisk together flour, gingers, baking soda, and salt.Mix until combined.
Using teaspoon scoop or 2 teaspoons , drop cookie batter on baking sheets, 2" apart. Sprinkle with Florida cyrstals and bake 10- 12 minutes.
