Ingredients
1 clove garlic, minced
2 Tbs. shallot, minced
2 sprigs tarragon
3/4 c. white wine
1 oz. lemon juice
1/2 bottle clam juice
1 stick butter
Preparation
Combine first six ingredients and reduce by 75%. Stir in butter in chunks off the heat. Add cream for a creamy sauce. Season with salt and pepper.
