Ingredients

1 14 once can of artichokes

1 red bell pepper thinly sliced

1/2 red onion thinly sliced

1 English cucumber thinly sliced

6 sliced green or black olives

2 tomatoes cut into chunks

1 tbsp capers

2 cloves of garlic chopped

2 tbsp extra virgin olive oil

2 tbsp lemon juice

1/4 tsp salt

1/8 tsp black pepper

6 sprigs of parsley for garnish

Preparation

Cut the artichokes in quarters and put in a bowl. Add red pepper, onion, cucumber, olives, tomatoes, and capers and mix.

In another bowl, whisk together garlic, olive oil, lemon juice, salt and pepper. Mix this with the vegetables Let salad stand for 1/2 hour for flavours to blend and then garnish with parsley and serve. Delicious!
