Ingredients

3 egg yolks

1/3 C. sugar

3T. lemon juice

2 1/2 T. unsalted butter

1 t. cornstarch

1 t. water

Preparation

In heavy saucepan whisk together yolks, sugar, lemon juice and butter. Cook over medium heat,whisking, until thickened, about 5 minutes. Combine cornstarch and water and whisk into mixture and continue to cook over medium heat until thick and glossy. Let cool completely , chill before using.
