Ingredients

1 large egg

1 large egg yolk

1 tsp dijon mustard

finely grated zest and juice of 1 lemon

1 cup grapeseed or canola oil

salt and pepper

Preparation

in a food processor, combine the egg, yolk, mustard, lemon zest and lemon juice and process until very smooth. With machine running, add the oil in a very fine stream until it is fully incorporated and the mayo is thick and creamy. Season with salt and pepper.
