Ingredients
Crust
1 cup sifted all purpose flour
1/4 cup confectioners’ sugar
1/4 cup melted butter
Topping
1 cup sugar
1/2 teaspoon double acting baking powder
2 slightly beaten eggs
2 tablespoons lemon juice
2 teaspoons grated lemon peel
Preparation
Combine ingredients for the crust by sifting 1 cup flour with 1/4 cup confectioners’ sugar. Add the melted butter. Press the mixture into an 8x8 inch greased baking pan and bake 20 minutes.
Meanwhile combine the ingredients for the topping. Pour these ingredients over the baked warm crust and bake 25 additional minutes. Chill. Before serving, cut into 2 inch squares and sprinkle with confectioners’ sugar.
