Ingredients

0.5 c sugar

0.5 Tbl lemon zest

1/3 c lemon juice

4 egg yolks

pinch salt

5 Tbl butter

Preparation

Whisk sugar, zest, juice, yolks and salt

Whisk in butter over double boiler till thick

Strain and cool
