Ingredients

150 gr. Lemon Juice (Meyer Lemons preferred)

200 gr. Sugar

185 gr. Eggs

2 Lemon zest

265 gr. Butter

2 gr. Gelatine or 1 Leaf

Preparation

• Soak Gelatine.

• Mix eggs, zest and sugar then add lemon juice and butter.

• Bring to a boil while whisking. Make sure butter melts before bringing to a boil.

• Strain then add gelatine.

• Cool with a paddle in mixer or pour into a pie shell.
