Ingredients
3 Large Egg Yoks
1/4 Cup fresh lemon juice (2 lemons)
Zest of 1/2 lemon
6 T. Sugar
4 T. Unsalted butter pieces, kept cold
Preparation
Put yolks, juice, zest & sugar in pan over medium heat. Wisk to combine, then stir constantly w/ wooden spoon until thickened, 5 - 7 mins. Turn off heat and add butter piece at a time. Cover and chill 1 hr or up to 2 days.
