Ingredients
1 c chicken broth
1 T grated lemon rind
2 T fresh lemon juice
1 T butter or margarine
1/4 t salt
2/3 couscous, uncooked
1 T pecan pieces, toasted
2 T chopped fresh parsley
1 2 oz jar sliced pimientos, drained
Preparation
Combine first 5 ingredients in a saucepan; bring to a boil. Add couscous, stirring well; cover, remove from heat, and let stand 5 minutes. Flugg couscon with a fork. Stir in pecans, parsley, and pimiento.
