Ingredients

1 c basmati rice

1 T olive oil

1 1/2 c chicken stock

juice of one lemon

1/3 c chopped cilantro

1/2 tsp salt

Preparation

Rinse rice thoroughly with cold water. Drain. Heat o.o. in saucepan. Add rice and stir till coated. Add stock, lemon juice, cilantro and salt. Bring to a boil. Reduce heat to lowest possible. Cook for 20 minutes. Let stand for 5 minutes before uncovering.
