Ingredients

2 cloves garlic, minced

1 large red onion, chopped

5-7 mushrooms, sliced

1 can chickpeas

2 tbsp olive oil

1 lemon, juiced

1 cup cooked brown rice

1/2 tbsp tumeric

1/2 tbsp cayenne pepper

pepper, to taste

fresh parsley, to taste

green onions, to taste

Preparation

Saute garlic, red onion, and mushroom over oil on medium-high heat until onions lose their stiffness. Add chickpeas, tumeric, cayenne pepper, parsley and green onions and saute on medium-high heat for 10 minutes. Add the juice from one lemon and saute for another 5 minutes. Serve over a bed of rice. Makes 2 generous servings.
