Ingredients
1 lb boneless, skinless chicken breast, thinly sliced
2 egg whites
1/2 cup unbleached all-purpose flour
2 tsp EVOO
3 cloves freshly chopped garlic
juice of 1 1/2 lemons
2 tsp dried oregano
2 tbsp fresh basil
1 cup low sodium, low fat chicken broth
1 oz white wine
6 oz sliced white mushrooms
freshly ground pepper, to taste
Preparation
- Trim chicken breasts of excess fat.
- Put egg whites in a medium bowl.
- Place flour on a sheet of wax paper.
- Dip chicken into egg whites then dredge in flour.
- Add EVOO to a skillet and saute garlic on medium heat.
- Add chicken and cook each side for four minutes until brown.
- Add lemon juice, oregano, basil, chicken broth, white wine, mushrooms, and pepper.
- Simmer for 12 minutes on medium-high heat.
