Ingredients
1/4 cup all-purpose gluten free flour
1 tsp salt
1/4 tsp pepper
1/4 cup butter or margarine (I use about 6 Tbsp. butter)
1/4 cup Real Lemon juice
8 oz. fresh sliced mushrooms (can also use canned mushrooms)
6 boneless skinless chicken breasts (can also use boneless thighs)
Preparation
Mix all ingredients in a plastic bag. Add chicken a few pieces at a time to the mix in the plastic bag…shake to coat. In a large skillet or electric fry pan, brown the chicken in the butter until golden brown on both sides…add lemon juice & mushrooms…cover & simmer approx. 20 to 30 minutes until the chicken is tender.
Serve with or over bullion flavored rice.
