Ingredients

About a dozen medium sized New red potatoes - washed and cubed with peel on.

3 Eggs

4 whole or sliced garlic Cloves

2 tsp dried Lemon Thyme

1/2 cup Hellman’s Mayonnaise

2 tbls drained and rinsed Capers

2 or 3 tsp fresh Lemon juice (enough to give a subtle lemon flavor)

Garlic salt (optional)

Preparation

Boil potatoes, whole garlic cloves and eggs til done. Peel and slice eggs. In large bowl, toss eggs and potatoes with mayo, lemon juice, lemon thyme and capers. Add a little garlic salt to taste, if desired.
