Ingredients

1 1/2 lbs cooked shrimp

1 12oz. box of medium whole wheat pasta shells

1 cup sliced carrots

1 1/2 cup broccoli florets

Dressing:

8 oz olive oil

4 oz. lemon juice

1/2 to 1 oz water

1 cup fresh basil

1 TBS kosher salt

1/4 tsp pepper

3 to 4 cloves garlic

Preparation

To make the dressing, combine the olive oil, lemon juice, water, basil, salt, and garlic and mix with a handblender. Set aside. Cook pasta as per instructions on the package, drain, and set aside. In a large bowl, combine shrimp, pasta, carrots, broccoli, and dressing. Toss until coated with dressing. Let chill for 2 -3 hours before serving.
