Ingredients

Bottom layer:

1 package Lemon Cake Mix

1/2 cup butter, melted

1 egg

Upper layer (Frosting mixture):

3 1/2 cups powdered sugar

1 Tablespoon butter, softened

2 Tablespoons fresh lemon juice

1 slightly rounded Tablespoon fresh grated lemon peel

1 egg

1 drop yellow food coloring

1 8-oz. package cream cheese

Preparation

Preheat oven to 400º. Grease bottom only of 13 x 9 x 2" baking pan.

  1. Combine upper layer ingredients; stir until moist. Pat into pan.
  2. Blend powdered sugar, butter, food coloring, lemon juice, and lemon peel into cream cheese.
  3. *(Reserve 1/2 cup for frosting bars.) Add 1 egg to the remaining frosting mixture. Beat 3 to 5 minutes at high speed.
  4. Pour over the base layer.
  5. Bake at 350º for 40 minutes. Cool completely.
  6. Top with the reserved icing.
  7. Cut into bars.
  8. Refrigerate leftovers.
