Ingredients
Bottom layer:
1 package Lemon Cake Mix
1/2 cup butter, melted
1 egg
Upper layer (Frosting mixture):
3 1/2 cups powdered sugar
1 Tablespoon butter, softened
2 Tablespoons fresh lemon juice
1 slightly rounded Tablespoon fresh grated lemon peel
1 egg
1 drop yellow food coloring
1 8-oz. package cream cheese
Preparation
Preheat oven to 400º. Grease bottom only of 13 x 9 x 2" baking pan.
- Combine upper layer ingredients; stir until moist. Pat into pan.
- Blend powdered sugar, butter, food coloring, lemon juice, and lemon peel into cream cheese.
- *(Reserve 1/2 cup for frosting bars.) Add 1 egg to the remaining frosting mixture. Beat 3 to 5 minutes at high speed.
- Pour over the base layer.
- Bake at 350º for 40 minutes. Cool completely.
- Top with the reserved icing.
- Cut into bars.
- Refrigerate leftovers.
