Ingredients

2 cups heavy cream

2/3 cup sugar

5 tablespoons lemon juice

1 small bay leaf

Preparation

Combine heavy cream and sugar in a medium saucepan and bring to a boil. Watch carefully to make sure that the cream does not boil over at any time during the process.

Once the cream reaches a boil, turn down heat and add the bay leaf. Let simmer for an additional 5 minutes. Remove pan from heat, remove the bay leaf, and add the lemon juice. Let cool for 10 minutes, then pour into four ramekins. Cover ramekins and place in fridge overnight, or about 4-5 hours until set. Serve cold.
