Ingredients

4-6 packages of cubed cheese (such as sharp and other cheddar)

1 jar diced pimentos WITH the juice

1/4 cup olive oil

1/4 cup balsamic vinegar

1-2 teaspoons minced garlic

1 teaspoon basil

2 teaspoons parsley

salt

pepper

Preparation

Mix all the ingredients together and pour over cheese cubes in a large freezer ziplock bag.

Refrigerate for at least 8 hours - turning bag over every hour or so.
