Ingredients

1 large cucumber, seeded and diced

3 ripe tomatoes, diced

1 green bell pepper, diced

1/4 cup fresh parsley, minced

1/4 cup fresh cilantro, minced

1/4 cup fresh mint, minced

3 scallions, diced

1 tsp sea salt

3 cloves garlic, minced

6 T extra virgin olive oil

Juice from 3 lemons

2 pita breads, slightly stale, and lightly toasted, and broken into 1 inch pieces (Whole wheat is best)

Preparation

Combine all ingredients EXCEPT the bread. Chill for at tleast one hour. Just before serving, toss with the broken up pita pieces.

This salad looks beautiful in a clear glass salad bowl. Don’t add the bread until you are ready to eat!
