Ingredients
3 12 oz. pkg mushroom (stems pulled off and crushed, caps quarted if large)
2-1/2 sticks butter
4 heaping tbsp crushed garlic
2 packs ritz crackers (crushed coarsely)
1 pkg. chopped frozen spinach
16 oz pkg shredded mozz cheese
1/4 c. white wine (optional)
Preparation
Mix butter, crushed stems, garlic, wine, spinach and heat in small pan until butter is melted.
Place mushroom caps into 5 qt. casserole dish. Pour butter mixture into ritz crackers. Mix well. Add 3/4 of mozz cheese. Add mixture to mushrooms. Top with remaining cheese. That’s it! Bake at 350 for 45-60 min til golden.
PS The key here is butter & garlic. The more the merrier!
