Ingredients

1lb ground beef (or leftover meat)

1/2 pkg of ready bake lasagna

1 lg can of tomato sauce (use a good one)

1 cup sliced mushrooms

1/2 bunch of spinach or swiss chard

1 small zucchini

2 green onions

1 tbsp of oregano & basil

2 cloves fresh garlic

1 tsp ground chili peppers

1/2 cup ricotta

1/4 cup water

1 cup grated mozzarela

1 bay leaf

Preparation

-fast fry beef with bay leaf adding salt, pepper & chili peppers to taste & drain fat, do not break up beef too much, leave small chunks :discard bay leaf -using a 2 quart deep dish with lid, pour water into bottom & 1/3 of the can of tomato sauce -break pasta and add half into the dish -add 1/2 of the beef & half of all of the veggies -sprinkle half of all of the spices -pour 1/3 of can of tomato sauce on top -mix with big wooden spoon -add remaining ingredients - except the cheese -mix again -once fully mixed and pasta sauce is generously covering all of the ingredients, make four pockets in mixture and push in the ricotta cheese, then cover with mixture of veggies, pasta & beef -put cover on and bake at 350 F for 1/2 an hour -take off cover and sprinkle with Mozzarela -bake for another 15 minutes without the cover -let sit for 15 minutes and serve
