Ingredients

8 oz. (250 gr.) pasta (tri-colour rotini adds some nice colour)

1/2 cup vegetable oil

1/3 cup white wine or rice vinegar

2 teaspoons dried basil

2 teaspoons dried oregano

1 clove garlic, finely minced or put through garlic press

salt & pepper

1/2 cup diced green onion

1/3 cup grated parmesan

cherry tomatoes, halved (approximately 1 cup)

cheddar cheese, cubed (approximately 3/4 cup)

2 teaspoons parsley

Preparation

Boil and salt water and prepare pasta. Meanwhile, make dressing by mixing together oil, vinegar, basil, oregano, garlic, salt & pepper. Drain pasta and cool slightly. Toss with dressing. Mix in parmesan, parsley, green onion, cherry tomatoes and cheddar. Chill.
