Ingredients
Latkas
1 small to med. zucchini
4 large potatoes
2 small onions
2 eggs
approx. 1/4 cup. matzo meal
sprig of Rosemary
Salt and pepper to taste
Cold pressed olive oil (in sprayer to start).
condiments in small serving dishes:
Unsweetend applesauce
Whole Cranberry Sauce
Goat cheese beat with Yoghurt
Tapanade (just black olive paste)
hot or medium Salsa
Preparation
Grate in a food processor onions, zucchini and potatoes.
Place into a large bowl, add eggs stir and add matzo meal,Rosemary,salt and pepper
Spray a non stick large heavy skillet with olive oil scoop mixture in tablespoonfulls onto the hot skillet. Once the heat is sizzling add some more olive oil from the bottle..(not a lot)..turn once..when well browned transfer to a rack on a baking sheet in the oven (300f)to keep hot a crisp. Serve on a platter surrounded by assorted spreads.
