Ingredients

Shrimp

24 medium shrimp

1 heaping TBSP Old Bay or Zatarins

Sauce

2 tbsp olive oil

2 tbsp minced garlic

Zest of 1 orange

2 cups orange juice

1 cup lime juice

3 cups catsup

1/2 serrano chili or 1 jalepeno

1/4 cup cilantro stems, chopped

2 tbsp worcestershire sauce

1 tbsp Tabasco

Salt and pepper

Garnish

1/4 cup red onion, julienned

1 avocado, diced

1/3 cup cilantro leaves, chopped

Preparation

For shrimp, add seasoning to pot of boiling water and reduce to simmer. Add shrimp and cook until pink, 30 to 45 seconds. Cool, peel and devein.

For sauce, in small saucepan heal oil on medium heat. Add garlic, stir one minute. Add orange juice and orange zest. Heat through. Empty into blender and add other ingredients and puree. Season with salt and pepper.

For garnish, mix cooked shrimp with half of sauce. Place in a glass, spoon more sauce over and top with a little onion, avocado and cilantro.
