Ingredients
4 Egg buns or brioche
1 lb ground chuck
1 lb ground lamb
1/2 lb pancetta
4 slices Gruyer
1 bulb roasted garlic
1/4 cup good quality mayo
Cumin
Salt and Pepper
Preparation
Mix beef and lamb in bowl and pat out 1/2 lb burgers. Sprinkle patties with cumin and salt and pepper to taste. Mix garlic and Mayo in separate bowl. Cook pancetta to crisp on low heat. Set aside on paper toweled plate. Toast buns with butter on the stove. Brown patties to desired temperature on a preheated grill (medium preferred). Assemble burgers with spreading mayo on buns. Top burgers with cheese and pancetta.
