Ingredients

Salad:

1 large package lambs lettuce (serves 4)

1 large (or 2 small) ripe bosc pears

half cup of toasted slivered almonds

Honey Dressing

Honey Dressing:

2 tbsp. extra virgin olive oil

1 tbsp. sherry wine vinegar

1 tbsp. minced shallots

2 tsp. good quality honey (chestnut recommended)

salt and pepper to taste

Preparation

For the dressing: Mix all ingredients and stir or shake well.

For the salad: Wash and dry the the lambs lettuce before putting it in a bowl. Top with slivered almonds and scatter the slices of mandarin oranges.

Add the dressing and toss to coat.

Serve immediately.
