Ingredients
2 granny smith apples, cored and diced
1 onion, diced
1 T cumin
1 T sugar
.5 t cinnamon
2 T lemon juice
.5 t grated lemon zest
thyme
2 lbs ground lamb
1 - 2 cups coarse breadcrumbs
2 eggs, lightly beaten
salt and pepper
Preparation
Prehead oven to 350. Saute apple and onion in butter until softened. Add spices, lemon, thyme and saute for one more minute. Add mixture to lamb, breadcrumbs and eggs. Don’t over mix.
Spoon into two loaf pans, and press down gently. Put in oven for 35 - 45 minutes, pouring off fat as needed. Finish on broil to crip top.
