Ingredients

1 pound lamb

2 medium onions, quartered and sliced

1 ounce ginger, minced

15 whole cloves

6 pods cardamom, cracked

1 stick cinnamon

4 cloves garlic, minced

1/4 cup vegetable oil

1 tablespoon salt

2 ounces cilantro

turmeric

cayenne

Preparation

  1. Fry spices on medium-high heat until they start to sputter

  2. Add one onion and fry, for a couple of minutes. Then add the ginger and minced garlic, until caramelized.

  3. Add lamb and turn heat up to high

  4. Brown lamb

  5. Add salt

  6. Reduce heat to medium-high

  7. Add turmeric and cayenne to taste

  8. Cover and simmer until lamb is tender

  9. Add second onion and cook until tender

  10. Add cilantro and stir in immediately prior to serving
