Ingredients
1 pound lamb
2 medium onions, quartered and sliced
1 ounce ginger, minced
15 whole cloves
6 pods cardamom, cracked
1 stick cinnamon
4 cloves garlic, minced
1/4 cup vegetable oil
1 tablespoon salt
2 ounces cilantro
turmeric
cayenne
Preparation
Fry spices on medium-high heat until they start to sputter
Add one onion and fry, for a couple of minutes. Then add the ginger and minced garlic, until caramelized.
Add lamb and turn heat up to high
Brown lamb
Add salt
Reduce heat to medium-high
Add turmeric and cayenne to taste
Cover and simmer until lamb is tender
Add second onion and cook until tender
Add cilantro and stir in immediately prior to serving
