Ingredients
1 Tablespoon olive oil
3/4 Pound lamb, trimmed & cut into 1/2 inch cubes (leg of lamb works well)
2 garlic cloves, minced
1/2 teaspoon dried thyme
1 large tomato, seeded & cut into medium dice
2 cans cannellini or great northern beans, drained
6 oz. kielbasa, sliced thin diagonally
1/3 Cup dried bread crumbs
Preparation
1)Preheat oven to 400 degrees 2)Heat oil in medium skillet 3)Add lamb cubes and saute until browned, about 4 minutes 4)Add garlic and thyme and saute until garlic softens, about 1 minute 5)Add tomato, beans and kielbasa and bring to simmer 6)Season with salt and pepper to taste 7)Transfer to 2-qt casserole dish and sprinkle with bread crumbs 8) Bake until bread crumbs are golden brown, about 8 minutes
