Ingredients

2 firm bananas, halved and split lengthwise

2 tbs butter

1/2 cup dark brown sugar

1 tsp cinnamon

2 tbs cup brandy

1/4 cup white rum (Castillo)

2 hefty scoops high grade vanilla ice cream

Serves 2

Preparation

Split and halve bananas, set aside.

In medium saucepan, melt butter and combine brown sugar and cinnamon. Stir two minutes until sugar grains are dissolved, add bananas and turn to coat, add brandy, turn bananas gently cooking until tender about 3 minutes. Add rum and ignite with a match. Gentle shake pan back and forth AVOIDING any splashing until flames die out. Pour over ice cream and serve immediately.
