Ingredients

Pie crust of your choice (I don’t usually home-make mine, I buy the safeway select brand and it turns out fine)

1/2 cup of sugar

-7 tbsp. of butter

2 cups of pine nuts

3/4 cup of raisins

3/4 cup of heavy cream

9 inch circular pie pan (any size will do, really, as long as it’s in this range)

Preparation

Preheat oven to 350 degrees Fahrenheit. Make a blonde caramel with the sugar and the butter by melting the sugar on medium heat until it’s mostly dissolved and liquidy, a brown-ish caramel color. This usually takes about 5-8 minutes. Add the butter and stir around, severing it with a wooden spoon until melted. The caramel mixture should be lightly bubbling. Add the pine nuts and the raisins. Stir mixture. Let this cook for 30 seconds while you get out the cream. Pour it into the mixture and stir until ingredients are evenly distributed, another 30 seconds. Next, pour the mixture into the pre-prepared pie crust. Cook in oven for 24-30 minutes, or until pie is slightly browned.
