Ingredients

1 medium onion (chopped)

2 cloves garlic (pressed)

1 branch of fresh thyme or a generous amount of dried thyme

1 bay leaf

six medium fresh carrots

2 potatoes (peeled and chopped)

2 potatoes

Preparation

Brown one medium onion with 2 cloves of garlic. Add thyme, bay leaf, six medium fresh carrots, all peeled and chopped.

Add 1 quart chicken stock, 1 tsp salt, white pepper and cover and simmer for 1/2 hour. Blend in food processor. Bring to a boil again, adding 2 oz. of butter.

Serve with chopped fresh parsley.
