Ingredients
2 chicken breasts, cubed
1 green pepper, thinly sliced
1 onion, chopped
3-5 spring onions thinly sliced
1 tsp chili powder
1 tsp paprika
1/4 cup water
2 TBS brown sugar
1/2-1 tsp cornflour
1/4 cup of soya sauce
1 cup of chicken broth
salt and pepper
salted peanuts (rinsed in water to remove a lot of salt)
Preparation
Brown the chicken, remove. Fry the pepper with the onions, when onion is tender add chili and paprika. Add 1/4 cup water and brown sugar, thicken with a little cornflour. Add soya, nuts, chicken and broth. Cook untl chicken is tender. Serve over rice and top with some crushed peanuts.
