Ingredients
1 Box of melba toast
4 medium tomatoes (cored and diced)
2 medium onions (diced also)
1/2-1cup of extra virgin olive oil
3-4 generous pinches of oregano
1/2 teaspoon of salt
Preparation
Preheat oven to 350F Mix olive oil, oregano and salt together in a bowl. Core and dice tomatoes, dice onions as well. Lay melba toast (white or brown depending on taste, I use white) on baking sheet. Brush on olive oil/oregano/salt mixture (leave 1/3-1/2 in bowl) Mix tomatoes and onions with remaining the mixture. With a tablespoon, dole out spoonfulls of tomato/onion mixture, a little or alot depending on your taste. At this stage you can either throw on some feta (or leave until after and put on cold, very yummy), or if your tastes run a little more north american you can put some cheddar on top (sliced or shredded) Place sheet in oven and switch to a low broil. Leave in until oil begins to bubble (3-7mins) Take out (garnish with feta if not already done) and enjoy!
