Ingredients

1 9 inch un-cooked pie shell

4 eggs

1 C brown sugar

1 C light corn syrup

4 Tbs butter

1 Tbs cream

1 Tbs instant coffee

1/4 C finely chopped candied pinapple

2 T finely minced candied ginger

1 C coarsley chopped fresh macadamia nuts

Preparation

beat eggs, add remainder of ingredients, pour in pie shell and bake at 350 degrees for 20 minutes then reduce temp to 300 degrees and bake for 15-20 more minutes untill center of pie is set and not runny.
