Ingredients

4-6 young zucchini

Greek EV olive oil

salt

pepper

oregano- pref Greek

cumin powder

1 qt organic whole milk yogurt

(or Greek strained yogurt)

1 cucumber (peeled and seeded)

6 garlic cloves

Preparation

Slice zucchini on a mandoline lenghtwise into medium thick slices. Season slices with salt, pepper, oregano, and cumin powder. Drizzle extra vergin greek olive oil over all slices and let marinade for 1 hour. Grill over medium heat.

TO MAKE -Tsaziki- Drain yogurt in a pillow case or tea towel over a large bowl for 4-5 hours. Discard the accumulated whey. In a food processor, or by hand grate one peeled and seeded cucumber. Place flesh in a towel and squeeze to remove all excess water. Combine yogurt, cucumber, 6 cloves of garlic (pressed), salt and 3 tbs of olive oil. Keep refridgerated until needed. Best if made the day before.
