Ingredients

6 cups peeled & shredded kohlrabi

1 cup peeled & shredded carrot

2 cups peeled & shredded Japanese radish (daikon)

2/3 cup mayonnaise

6 Tablespoons lemon juice

2 teaspoons dried parsley

Preparation

Combine shredded kohlrabi, carrot, and radish in a large bowl. In a separate small bowl, wisk together the mayonnaise, lemon juice, and parsley, adjusting to taste. Pour dressing over slaw and mix. Chill for a couple hours before serving.
