Ingredients

2-12 oz NY Strip Sirloins (bring to room temp - about an hour)

2 oz very finely ground coffee

4 oz Cajun seasoning mix

2 cloves Garlic

2 Shallots

Worchester Sauce 1 oz

Oil

Shucked oysters - 14

2 oz flour

2 oz butter

Juice of ½ lemon

Preparation

Mix the coffee and 2 oz of Cajun mix and coat the steaks

Cook steak over a hot wood fire for about 5 min on both sides and set aside to rest

Bring enough oil to fry the oysters up to heat

Toss the oysters with the flour and remaining Cajun mix - shake off excess

Fry oysters crisp

Heat 2 oz butter over high heat and add the minced garlic , shallots, Worchester and lemon - brown

Put steaks on the plate , top with 7 oysters each and drizzle with garlic - shallot butter
