Ingredients

1# good quality pasta (bow ties or wagon wheels work well)

1# fresh tomatoes, chopped small (2 large)

1/4 cup olive oil -EVOO

1TBSP EVOO

1 tsp salt

1 small red onion, chopped

1 shallot, minced

2-3 cloves fresh garlic, chopped fine

3 tbsp parsley, minced

1/4 cup fresh basil, chopped

1/2 yellow bell pepper,coarsley chopped

1/2 red bell pepper coarsley chopped

12 oz parmesean and or asiago cheese, shredded. (Any combination of Itialian cheese is good.)

salt and pepper to taste

Preparation

  1. Make Dressing 1st Chop tomatoes and put 1/4C EVOO and 1 tsp salt in small bowl. This will get nice and juicy after you add the salt. Add the basil to this mixture.
  2. Cook pasta, al dente.
  3. Chop all veggies and add to large bowl for tossing. Add 1 tbsp EVOO and 1/2 cheese. Add HOT pasta, do not rinse it. Add the rest of the cheese, toss and cover with plastic wrap. After the cheese melts add the dressing, toss, adjust seasonings. Let it rest for 10-15 minutes for flavors to meld. ENJOY!
