Ingredients
1&1/2 pounds ground beef
3 cans refried beans
3 small cans chopped green chilis (do not drain)
1 package taco seasoning
1 large onion chopped
1&1/2 pounds grated sharp cheddar cheese
1 small can chopped black olives
18 large flour tortillas
Preparation
- Brown ground beef & drain.
- Add taco seasoning to the ground beef & follow directions on the package.
- Add green chilis and refried beans.
- If tortillas are not soft & pliable then wrap them in a damp cloth & aluminum foil and place in warm oven for a few minutes to soften.
- Spoon meat & bean mixture onto tortillas.
- Top the mixture with onion & cheese.
- Roll the tortillas tucking ends in.
- Place seam side down in a casserole.
- Save enough sauce to water down a little and pour over the burritos in the casserole.
- Top the whole thing with chopped olives and rest of cheese.
- Bake at 350 degrees for 30 to 45 minutes, until heated through.
