Ingredients
4 Tomatoes (on vine variety) chopped
4(+2) cloves of garlic, minced
1/2 red onion, chopped
8 strips of bacon, cooked and crisped and crumbled
1/3 c basil, chopped
4 ounces goat cheese, crumbled
splash of olive oil
4 tbsp butter
1 baguette, sliced
salt & pepper
Preparation
In a large mixing bowl, combine tomoatoes, onion, olive oil, half of the basil and 4 cloves of minced garlic. Add salt & pepper to taste. Set aside.
Melt butter and mix in remaining 2 cloves minced garlic. Spread garlic butter mixture onto bread slices. Broil until golden and remove from oven, about 1-2 mins.
Place 1-2 tbsp of tomato mixture onto bread, top with bacon crumbles and goat cheese. Broil until cheese melts, 1-2 mins.
Transfer to platter, sprinkle generously with remaining basil. Serve immediately.
